Fried Egg and Hummus on Toast

There is a time and a place for a super intricate breakfast that takes an hour or more to prepare. For me, personally, I usually never have the energy in the morning to go through that so early. I am not, and never have been a morning person. I am sure my mother can attest to this seeing as I was a chronic bus miss-er all the way from kindergarten to senior year of high school, I pretty much recruited my mother as an unwilling personal chauffeur. Ironically as I’ve gotten older, I am also no longer a night person. Lately I find myself in a perpetual state of sleepiness. Offer me a bed and a pillow anytime of day and I will happily fall asleep for an indefinite amount of time. I guess this is what it means to get older. 

In the spirit of laziness, I thought I would share with you one of my favorite recipes for mornings when I would rather get a few extra minutes of sleep without sacrificing a quality, filling breakfast full of flavor. Since I have gotten married I have experimented a lot with hummus. I could easily say it is one of my most favorite ingredients to use in unusual ways. This particular recipe may not seem so unusual, but stay tuned, soon I will share with you my spaghetti and hummus recipe (don’t knock it till you try it). This hummus and toast recipe was actually inspired from that. I was too lazy to boil the pasta one day at lunch and wanted something quicker. I ended up with this, and it has now made its way into regular rotation in the mornings and occasionally at lunch when I don’t have any good leftovers in the fridge and don’t feel like cooking for more than 10 minutes. =)

 

All you will need is 2 slices of bread, 2 eggs, hummus, harissa (optional) and some butter for cooking the eggs.

 

This recipe could not be easier. First thing you need is 2 pieces of toast, I prefer a whole grain or multigrain toast. Bonus points if you get fresh bakery bread. I have made this before with cranberry walnut bread from the bakery at whole foods before (honestly I should have used plain hummus on that instead of garlic hummus, although slightly awkward, it was still delicious!). Point is, it really doesn’t matter what bread you use in this, but it’s better if it’s providing some sort of nutritional value to the meal. The last thing you need is empty calories when you are hungry first thing in the morning, you want something that is going to fill you up a little bit. The next thing you need are 2 eggs. 1 for each piece of toast, this is not a sandwich, we are trying to optimize our carb to protein ratio here! Lastly, you will need some hummus, homemade is great, or your favorite store-bought flavor works too. It’s really open-ended. I love garlic in anything and almost everything, so I normally buy the garlic hummus. (It’s all for myself since my husband is not a fan of most things too garlicky). In addition to the hummus I like to add some harissa for an additional flavor profile. When I used to live in NJ they used to sell this amazing fresh harissa at the local whole foods and I literally used to find ways to incorporate it into everything I made. Since leaving NJ I’ve had a much harder time finding it, but luckily my new local whole foods just recently started stocking this variety of harissa in the international aisle. I also found the same brand on Amazon: Mina Harissa Spicy Traditional Moroccan Red Pepper Sauce, 10 oz. One of these days I need to learn how to make it myself. You can also add a slice of tomato to each toast if you want, the acidity of the tomato really plays well with the melted butter from the eggs and the savory creaminess of the hummus. To be honest when I am making this, the last thing I want to do is take out my cutting board to cut a couple of slices of tomato and then have to wash the knife and cutting board after. But if you have the energy I would highly suggest going for it, you will not regret it!

We don’t really have a big kitchen with a lot of counter space, which means a toaster does not have priority. I usually toast the bread on the stove in the same pan I am going to use to cook the eggs on, on medium heat. It reduces the mess, and it’s still pretty quick. Just be sure to wipe off all the crumbs once the toast is done so that it doesn’t burn. I use a dry paper towel and just wipe it directly into the sink.

When the toast is done, I like to let them cool together leaning off of each other for maximum air circulation. This helps them cool without building any steam that would make them soggy. This would happen if you just let it cool on a plate or any flat surface, steam would build up underneath the toast and cause the bread to lose its “crunch”.

Once the toast is done, lower the stove to low heat and let the pan cool off of the stove for a minute. Add some butter to the pan and allow it to melt to coat the pan. While the pan is still off of the heat (it should still be pretty hot) Crack 2 eggs in the pan on opposite sides. Season with salt, pepper and chili powder. 
After your done seasoning, cover the pan and place it back on the stove set to low heat. Cook the eggs according to how you like them. I like the yolks soft but not too runny (so it doesn’t make a mess) I usually cook them until the yellow develop a thin white film.
In the meantime, prepare the toast (it should be cool enough by now) by spreading it with some hummus and harissa if you chose to use it. 

Top the toast with the cooked egg and its all done! Be sure to put any of the extra browned butter from the pan on top of your eggs also for added flavor! You can season it with an additional dose of crushed pepper or sprinkle of salt if you want at this point. =) A filling, healthy, protein filled breakfast that takes no more than 10 minutes to make from beginning to end =). 

you can see that the yolk is soft but not runny. =)

Ingredients
  1. 2 slices of toast - any variety you prefer
  2. 2 large eggs
  3. 2 tablespoons of hummus - homemade or any variety you choose.
  4. 1 tablespoon of harissa (optional if you like spicy)
  5. 1/2-1 tablespoon of butter (if you are trying to be healthier use less, if you don't care use more)
  6. sprinkle of salt
  7. sprinkle of pepper
  8. sprinkle of cayenne pepper
Instructions
  1. Toast bread in a toaster oven, or on the stove to the level you prefer, then "tent" the toast to allow it to cool without building steam.
  2. If toasting on the stove, be sure to clean crumbs off of pan once toast is done. Turn stove to low and keep the hot pan off of the heat when you add the butter.
  3. Let the butter melt in the pan and then crack each egg into the pan on opposite sides
  4. Season the eggs with salt, pepper and cayenne pepper
  5. Put the pan back onto the heat and cover until a thin white film develops on the yolks.
  6. While the eggs are cooking take the now mostly cooled toast and spread 1 tablespoon of hummus and 1/2 tablespoon of harissa onto each slice.
  7. When the eggs are done cooking, place them gently onto the toast. Be sure to put any remaining melted and browned butter from the pan on top for added flavor =)
  8. Serve and enjoy =)
Notes
  1. *I have not tried this, but I think that it would be good if you don't like spicy food to substitute salsa for the harissa. You just want something to provide a level of acidity to the dish, and salsa will also achieve that =)
